Beef Pot Pie, or I Hate Leftovers
I really don't like leftovers. Or, I should say, I can bear to eat leftovers ONCE, then after that I wish it would magically disappear. When I made the pot roast and honey-roasted root vegetables, we were left with quite a bit. We ate it for one other meal, and when it was clear that no one was interested in eating any more, I decided to turn it into something else.
I picked up a store brand (in our case Food Club) package of pie crusts and left them on the counter to thaw for about 20 minutes. While the crusts were thawing a bit, I chopped up the pot roast and put it in a pot with the leftover gravy. To this, I added the leftover honey-roasted root vegetables, some frozen green beans and about a cup of frozen peas - warming it until everything was heated through. I placed one crust in a pie pan, filled it with the warmed up pot roast mixture, topped the whole thing with the second crust and baked it according to the pie crust box's directions.
Voila - Beef Pot Pie. It was a whole new meal, it was delicious, and we ate almost the entire thing. Which of course, meant very little leftovers (again).
I will definitely try this method again with other leftovers. Martin thought it had great potential, suggesting that for our next pie we fill it with chicken nuggets, french fries, and ketchup. I thought it sounded pretty gross, but I bet we'll try it anyway.
