Pioneer Woman Pot Roast

Since that side of beef arrived in our freezer this fall, we've been eating a lot of beef.  Over the past few years, I've tried probably a dozen recipes for pot roast.  Sometimes they are very traditional, sometimes I use a crock pot, sometimes it's very good and sometimes it turns out so dry that even puddles of gravy can't even make it seem moist.  I tried a new recipe awhile ago that I thought was delicious.  I followed the recipe for the most part, only adding some cornstarch to the liquid to make it more gravylicious and less like au jus.  Oh yeah, and I didn't add any of the vegetables.  So I guess I did everything in here if you only count the meat and liquid parts of the recipe.

I'll definitely try this one again.  It was a huge hit at our house, earning the top honors of "Oh Fay!" and "Now that's my kind of meal!" (that one from Marty).
