Butternut Squash with Rosemary Cream
Marty loves squash and I love Marty, so for Valentine's day I made him his favorite side dish. He considers squash not a vegetable, but an early form of dessert. It's pretty easy to make him happy.
This is an easy side dish to make and can be made up to a day ahead and reheated in the microwave before serving. Butternut squash is my favorite variety to make because it's so easy to prepare. The squash can be peeled with a vegetable peeler, cut in half, the small area of seeds scraped out, and diced for roasting.

Note: Power Ranger not needed to make this recipe.
In this recipe, I used 1/2 c. of Rosemary Cream. If I wasn't going to make the cream sauce for use in another recipe, I'd skip that part and just add some non-dairy butter, extra salt and pepper.
