Chicken Lasagna Rolls with Rosemary Cream

I've been seeing all kinds of recipes for lasagna rolls and they always look so pretty and festive.  The problem for me is that most of these recipes include ricotta cheese and I haven't found a non-dairy substitute for the creamy cheese.  Knowing that I wanted to serve the Rosemary Cream sauce for our Valentine's dinner, I picked a few ingredients that I thought would pair well with those flavors and decided on chicken and spinach.  The result was delicious and the rolls were easier to assemble than I'd anticipated.  This would be a very pretty dish to serve for guests.


I could have eaten the WHOLE PAN.

Allergy note: I use shredded Rice Mozzerella in this recipe which contains casein, a component in milk.  So while this recipe is lactose-free, it isn't 100% non-dairy.  Sophie doesn't seem to have a reaction to eating this cheese, so I use it quite a bit in any recipe that calls for cheese.
