Creamed Corn

Do you like creamed corn (I don't)?  Does someone at your house like it (Marty does)?  Out of love, and the desire to have a nice, bright vegetable to serve for Sophie's birthday party, I decided to try a non-dairy version of creamed corn.  My kids have never had it, of course, so I wasn't quite sure if they'd like it.  I hoped that Marty would like a non-dairy version of one of his old favorites.  And me - I was just hoping that it wouldn't taste like I remembered.  Because what I remembered wasn't good - mushy corn with a faint taste of can.  And to seal the deal on my childhood memory of distaste, my mom told me that she used to serve it with cut up hot dogs mixed in.  "GROSS," I said.  She just laughed.

I don't know if it was this non-dairy version with a slight nutty-soy taste, or just the lack of can flavor, but man, this was DELICIOUS.

I made this recipe a day ahead and reheated it before serving.  It was just as good as it had been the night before, which will make this one of my new favorite make-ahead dishes.

For those of you using cows milk, feel free to use it in place of the plain soy milk in this recipe.
