Italian Meatloaf

In a continuing effort to find ways to make my way through the ground beef inventory in my freezer, I tried a recipe last week for Italian Meatloaf.  We've had a lot of meatloaf since the beef arrived a few months ago, and I wanted to mix it up a little bit.  I searched for a recipe that had Italian flavors, green olives, and mozzerella.  I settled on this recipe and made a few modifications.

Marty and I both thought it was pretty tasty, but Martin decided that he'd had enough of meatloaf and refused to eat it.  Sophie joined his boycott and they enjoyed my fine recipe for chicken nuggets (pull out of bag, microwave, and serve) instead.
