Banana Split Cupcakes
Getting sick of cupcakes yet? No? ME NEITHER.
When Martin and I were planning his birthday party, I handed him the Vegan Cupcakes Take Over the World cookbook and told him to pick anything he wanted. Not surprisingly, he picked the one that had the most stuff piled on top - Banana Split Cupcakes.

They were delicious, but a bit tedious to make - only because there are so many elements. The cupcake is made with mashed ripe banana, a few chocolate chips mixed into the batter, and a dollop of pineapple sauce dropped into the middle before baking. Then, on top is a swirl of buttercream frosting, drizzling of melty chocolate, sprinkles, chopped peanuts, and finished with a maraschino cherry.

Next time I would place the cupcakes closer together when I drizzle the chocolate. I didn't quite realize that it would be such a drippy affair.

These look and sound so delicious. Now that I know they have a decorating system from William Sonoma, after months of admiring your works of art, I think I'm finally going to get starting on my own cupcake obsession.
