Corned Beef and Cabbage Dinner

Since Martin's birthday is on St. Patrick's Day, we like to celebrate our Irish heritage by making something traditionally Irish a day early.  Last Sunday, we tried a new recipe for Corned Beef and Cabbage - it was easy to make and produced the best corned beef we'd ever had.  The sides that are part of this recipe - boiled cabbage seasoned with caraway and boiled potatoes seasoned with a touch of lemon - are both delicious as well.  I will make the entire meal again - and there will be three slightly Irish people here who will be willing to join me in the celebration.


I intended to follow the original recipe which I found on Cooking Light.  But, as usual, I made a few changes as I went.  I'm sure the original would be excellent as is, but I'll probably follow the modified version next year.
