Chocolate Mint Cupcakes

I really love the combination of mint and chocolate, so when I read the recipe for Chocolate Mint Cupcakes in Vegan Cupcakes Take Over the World, I was really excited to make it.  This recipe combines their Basic Chocolate Cupcake with a Mint Icing (a little like buttercream except without the butter, making it a bit lighter), a dollop of Quick Melty Ganache, and a candy spearmint leaf.  They were so pretty and tasted delicious.


I made the first batch of cupcakes on Sunday morning and by the afternoon almost half were gone so I had to make another batch.  Due to a snowstorm, our dinner party was delayed so these cupcakes sat until Tuesday night.  I wasn't sure how they would taste or how they'd hold up - but they still looked good and were pretty moist.  Not as moist as the first day, but not yet dry.

These were delicious and I'd definitely make them again.
