Napa Valley Chicken Sandwich
Over the past few years, I've hosted a handful of baby and bridal showers for family and friends. When choosing recipes to use for a party, I like to pick ones that can be made ahead and served or assembled with ease. This recipe is one of my favorites, is very easy to make, and is always a big hit.
The flavors are delicious - diced chicken, rosemary, the saltiness of Kalamata olives, the sweetness of red grapes, and mayo (who doesn't love mayo?). My favorite way to serve this is on a crusty bread or baguette, but Marty prefers soft dollar buns. Never heard of dollar buns? That might be a Midwestern name, I'm not sure. Basically any small white bun that when held, would make Marty say "this is as soft as a pillow" will work.
I've included two versions of the recipe below - the only difference is in the ingredient amounts. Once I go to the effort of figuring out how to double or triple a recipe, I like to keep it around that way in case I need it again. Because as Barbie used to say, "Math is hard".
