Chicken Thighs, Potatoes, and Tomatoes

Tonight I tried a new recipe that I found in The Week magazine.  It was described as "inspired comfort food" by Chef Jamie Oliver.  It was really delicious, although I thought it was kind of a lot of work.  I really, really hate cleaning or deboning meat so this recipe was an exercise in patience.  The flavors were terrific and it smells like heaven (if heaven smells like roasting potatoes, olive oil, and herbs to you).  But dang, for a dish described as "simple", I'd hate to try one that was described as difficult.

Try it, but plan taking your time and maybe having some wine while you cook.  As if I have to tell YOU to do THAT.
