We're lucky enough to have a freezer full of beef, but let me tell you, it takes some creativity to use about 100 lbs. of ground beef in a year.  So as I was going through a file of some of my favorite recipes, I was thrilled to come across this one again - Diner Meat Loaf Muffins from Cooking Light.  It's been a long time since I made the recipe, but it was just as good as we had remembered.  It's quite easy to make, cooks in much less time than a regular meatloaf, and the leftover muffins freeze/reheat well.
