Pulled Pork
Yesterday morning I put a pork loin in the crockpot, and by dinnertime, we had pulled pork for sandwiches. Sure, the kids opted for noodles, but should they decide to try the pulled pork - we have about five pounds ready to go. This recipe was easy, made quite a lot of pork, and should be terrific on sandwiches, added to soup, or in enchiladas. The meat itself is only lightly seasoned, which I like because then it leaves me wide open to season it to fit into other recipes. I'll definitely make this one again.
Note: the recipe on the Crock Pot site is missing some information - like the amount of time to cook it. I roasted the pork on low for six hours, added the liquid, and roasted it for an additional four - total of 10 hours on low. This would be a good recipe to do a day ahead and have the pork ready to go for sandwiches to be reheated in the crockpot.
