Non-dairy Macaroni and Cheese

I grew up eating Kraft Macaroni & Cheese and loved it.  I still love it.  But since we figured out that Sophie was allergic to dairy, it's not something I made for dinner.  I've tried all kinds of recipes to find a substitute that has a similar taste and texture, and after all sorts of tries, I've come to the conclusion that THERE IS NO DECENT SUBSTITUTE FOR POWDERED CHEESE DINNER.

Last night I made a very plain version of a recipe I've used before and Sophie LOVED it.  Martin and I thought both it was okay, but Sophie thought it was AWESOME.  And if she thinks it's awesome, then it means she can eat that while the rest of us can pig out on the Kraft version without making Sophie feel left out.  Not only does she not feel left out, but she feels like she's having a special treat.  I should note here that she's never tasted Kraft Macaroni & Cheese, so she doesn't know what she's missing.

In case you want to run the Great Mac & Cheese Experiment at your house, I've tried the following recipes as well.  They vary from good to passable, but I really think it comes down to preference.  The soy milk-based version was most widely enjoyed, and the one containing nutritional yeast was the liked (meaning I'm the only one who would even eat it).
