When it comes to Potlucks, I like the idea more than the actual event.  I love getting together to share new dishes with friends, but also have a fear of food-borne illness caused by food sitting out for too long.  Its for this reason, that I've created a new category here called "Potluckiest".  I'm going to add entries here that might be tasty at a potluck AND can sit out for extended periods of time.  And what better to kick it off with but a recipe that has a Potlucky sort of name - Cloggers Delight Salad.  I have no idea what the title means or its source, but I sure wish I did.

The original recipe is non-dairy so I didn't make any changes there.  For our household, I left out the almonds, but I've had it with them and it makes a delicious addition.
