Chicken Fried Rice

Last night I was hungry for something filled flavor, kind of greasy, and filling - but was also feeling kind of lazy.  Basically, I wanted take-out, but didn't feel like going out to get it.  After looking through the ingredients on hand, we settled on Chicken Fried Rice. I had almost everything on hand for this recipe (no mushrooms, ground ginger instead of fresh, yellow onions instead of scallions).  It was easy to make, but would have been even easier if I had been using leftover rice or chicken, saving myself the steps of preparing those items.  Regardless, it was still easy, pretty quick, and flavorful.  We'll definitely make it again.
